Hi everyone!

“Vanilla Latte”…..heads up, this has coffee in it. Thus the recipe title. I say this because Oliver decided to help himself to a big bowl right before bed. Apparently the COFFEE FLAVOR didn’t tip him off. He got 2 hours of sleep that night.

If you’re excited about going Whole Foods, Plant-Based with us this year, but suspect it may be a bit daunting…. fear not! Just like any eating plan, there are overly complicated recipes, and there are simple & easy ones. I’m all about simple, delicious and totally doable!

Vanilla-Latte Chia Beauty Breakfast

Chia Seeds are not only a Radiance-Boosting Plant-Based Food, but they’re SO easy to make into a delicious pudding for Breakfast, Snacks or Desserts. PLUS – they deliver a big punch of vitamins, protein, fiber & omega-3 fatty acids – making them great for skin!

I’ve added an optional scoop of Lucuma Powder – a Beauty Adaptogen that supports healthy Skin & Balanced Energy. It’s got a somewhat sweet, maple-y undertone that works really well with the vanilla in this recipe.

Beauty in a Breakfast!

…Ok, in a Parfait glass. It’s prettier, no? ;-). Omega-3 rich Chia Seeds help provide building blocks for healthy skin, cell function and new collagen production – keeping our skin strong and wrinkle free!

Optional Decadence:

If you want to make this a little more decadent, top with any non-dairy whipped topping that you like! Here, we’ve made our own by whipping coconut cream, with a little maple syrup and vanilla, then layered it into a dessert glass, parfait style!

Here, we made our own Coconut Whipped Cream.

Coconut Cream + Maple Syrup to taste + Splash of Vanilla.

Whip until soft peaks form.

Ingredients
  

  • ½ cup fresh brewed coffee
  • ¾ cup vanilla almond milk, unsweetened
  • 1 tsp vanilla extract
  • 2-3 tbsp maple syrup (to taste)
  • 1 tsp Lucuma powder (for skin & energy balance) Optional
  • cup  chia seeds

Instructions
 

  • In a medium mixing bowl, whisk together Coffee, Almond Milk, Vanilla, Maple Syrup and Lucuma, if using.
  • Pour in Chia Seeds and give it a good whisk.
  • Place in fridge overnight – or at least 4-hours.
  • BE SURE and go back to the fridge after the first 20-minutes and give the mixture another good stir. Chia seeds coagulate really quickly, so you’ll want to stir a few times in the beginning.
  • SERVE: Scoop into a bowl and enjoy. OR Make it into a healthy treat by adding a little non-dairy whipped cream
