1-2slices Ezekiel bread, toasted (1-slice makes this open-faced for fewer carbs)
Pesto (I use basil & pine nut – but use your favorite)
¼medium avocado, sliced
Instructions
Heat a grill pan or frying pan over medium-high heat. While it’s heating, spray both sides of eggplant, zucchini and onion with cooking spray, seasoning both sides with salt & pepper. Toast the Ezekiel bread.
When the pan is hot, place all the veggies into the pan, grilling each side until they are tender. Meanwhile, slice 1/4 of an avocado and wipe excess liquid from the jarred roasted red bell pepper.
Assemble
Spread the Ezekiel toast with Pesto. Layer on the eggplant, zucchini, avocado and onion. Slice in 1/2 and enjoy!
