Skinny Garlicky Mashed Potatoes

Ingredients
  

  • 4 lbs Russet potatoes, peeled and cubed
  • 8 large garlic cloves, peeled and lightly crushed
  • ½ cup light sour cream
  • 1 cup chicken broth (or vegetable broth)
  • ½ cup skim milk
  • 2 tbsp unsalted butter, melted
  • kosher salt and fresh ground pepper to taste
  • 2 tbsp fresh thyme
  • Chives, chopped for garnish

Instructions
 

  • Put potatoes and garlic in a large pot with salt and enough water to cover the potatoes. Bring to a boil, cover and reduce heat.
  • Simmer for 20 minutes or until potatoes are tender, drain and return potatoes and garlic to the pot.
  • Finally, add sour cream and rest of the ingredients. Using a potato masher, mash until smooth. You can use a handheld mixer but be sure not to overmix the potatoes or they’ll turn gummy. No Bueno!
  • Season with salt and pepper to taste. Put in a pretty serving bowl, sprinkle with a few chopped chives for color and enjoy!
