Instructions
Preheat oven to 400-degrees. Spray a 24 mini-muffin tin with cooking spray. Be sure to spray bottoms and sides well to avoid a sticky situation. Just sayin’.
In a large mixing bowl, or if you have one – a large measuring bowl with a pour spout…..whisk the eggs and salt & pepper until incorporated. Add your riced cauliflower, cheddar cheese and chives. Stir until incorporated.
Either pour or ladle the mixture about 1/4″ from the top of each muffin tin, place in the oven & bake for about 20-25 minutes. Remove from oven and let the bites cool in the pan for about 5 minutes.
Remove from the tin, place on a serving platter & make it pretty by sprinkling minced chives all over the pieces and plate. Can be served warm or room temp. Happy Holidays!
