Ingredients
  

Bowl

  • 1.5 cup cooked quinoa
  • 1 peach sliced
  • 1 cup raspberries
  • 1 cup blackberries
  • 4 mints leave julienned (to taste or optional)

Honey-lime Drizzle

  • 2 tb honey
  • 3 tbsp fresh lime juice

Instructions
 

  • Prepare quinoa according to package. (I use quinoa often and keep a premade batch in the fridge). In a bowl combine quinoa, raspberries, peach, blackberries & mint leaves. 

For the Drizzle

  • In a small bowl whisk the honey and lime juice. Drizzle over the fruit salad, toss to coat.  Divide between 2 bowls and enjoy!  OPTION: To save the 2ndserving for the next day, store leftover drizzle separately – then toss with fruit salad right before eating!
