For breakfast or even a snack!
Fresh squeezed lemon & a pinch of zest (because we love being all extra about things, right?) are what makes this yummy make-ahead Plant-Based breakfast da bomb! Gluten-free, No Added-Sugar and packed with fiber, protein, vitamins, minerals and good fat – this is Healthy-Summer at its best!
I called this dish “breakfast” for obvious reasons….. I mean, oats and milk = breakfast, right? But you know our APC mantra – You’re the Boss of YOU, and I love this just as much as a snack. No rules – have it as you wish 😉

I love, love LOVE sharing simple ways to make Healthy-Living easy & motivating to integrate into your life. Especially when it comes to cooking. Don’t get me wrong….. I LIKE to cook – but I have zero desire to spend all day doing it and I definitely don’t want to make brand new dishes every fricking day – do you? I mean – we’re BUSY, am I right??
that have truly made Healthy-Living 2nd nature in our home.
Two of those short-cuts are:
- Making meals with Simple, Limited, Healthy Ingredients.
- AND Doubling up on the recipe, so we have at least another serving for the next day.
This Lemon Poppyseed Overnight Chia-Oats recipe is definitely one that I double-up on! The recipe makes 2-servings, so I double it for 4-days worth of breakfasts or a snack – just depending on the mood! Oliver doesn’t like lemon (wtf??), so he won’t dip into my stash. It’s easy to make – but heads-up, requires a touch more “work” than typical overnight oats only because you’re zesting a lemon. Other than that – it’s super easy, traditional Overnight Oats.

Have as Breakfast or a Snack. Sometimes I make in the morning, knowing it’ll be a great snack later in the day. Works perfectly!
LEMON POPPYSEED Overnight Chia-Oats | PLANT-BASED + Gluten-Free + Sugar-Free
Ingredients
- 1 cup Rolled Oats, gluten-free
- 2 tbsp Chia Seeds
- 1½ tsp Poppy Seeds
- 1½ tsp Vanilla Extract
- 2 tbsp Maple-flavored Monkfruit Sweetener
- ¼ tsp Kosher Salt
- 1 tsp Lemon Zest (about 1/2 a lemon)
- 2 tsp Lemon Juice, fresh squeezed
- 1 cup Vanilla Almond Milk, unsweetened
- Thinly slice the other half of the lemon for garnishing
Instructions
- In a medium mixing bowl, place all ingredients except for the lemon slices that are for garnishing.
- Give it a good mix – then either pour into an airtight container OR into 2 individual containers or Mason Jars.
- Place in the fridge overnight – that’s it! In the morning, stir, garnish with a lemon slice and enjoy!
