If you love love LUUUUVVVV pancakes, but not the schlumpy, unhealthy feeling they give you afterwards – you HAVE to try these Blueberry Blender Pancakes!! Even better – they’re a legit WFPB recipe that you can totally make the night before.
The Basic Pancake is Just 6-Ingredients in a Blender.
Have them plain, or fold-in any healthy add-in that you like! We used blueberries because ummm – they’re my favorites plus they’re rich in antioxidants and vitamins.
That being said – you could totally fold in any fruit that you like. Try chopped banana & top with toasted walnuts and a sprinkle of cinnamon!
I added a sliver of vegan butter and a drizzle of no-sugar maple syrup. You’ll never want regular pancakes again. Srsly.

Blueberry Blender Pancakes | PLANT-BASED
Ingredients
- 1 cup rolled oats
- 1 banana
- ½ cup almond milk, unsweetened
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1 tbsp apple cider vinegar
- ¾ cup fresh blueberries
- 1 tbsp drizzle of No-Sugar Maple Syrup Optional
Instructions
- Place all ingredients into a blender (except blueberries & optional maple syrup), blend until everything is incorporated.
- Fold in 1/2 cup of the blueberries. Keep the rest to scatter atop pancakes before serving.
- Heat a non-stick pan over medium-heat. Spray with a touch of cooking spray.
- Pour in batter, making pancakes as large or small as you wish. When the cakes are bubbling and cooked around the edges – flip and cook anther 1-2 minutes.
- Serve: Sprinkle fresh blueberries on top and eat as is, OR drizzle a tablespoon of maple syrup on top. Love it!
