Who loves a good SNACK!!?? Me too!! Going Whole Food Plant-Based as we are this year, at APC – means not only figuring out a few new meals, but re-thinking how we snack too.
My husband Oliver, was the impetus for this particular easy-to-make, Chia-Seed Snack Cracker. Normally, his typical snack consisted of some sort of cracker, with 1/2 a pound of turkey (yah – I’m serious) and either cheddar or cream cheese. Obviously THAT’S not happening anymore.
The trick was to find something hearty that would fill him up (and me too!), yet still align with a Plant-Based Diet . This Plant-Based Chia-Seed Cracker fits the bill! Super easy to make, with minimal clean ingredients (Chia, Nuts, Flaxseed, Nutritional Yeast) – you can easily whip it up in less than 10-minutes, then bake & enjoy. Store in the pantry.

Chia & Water Mixture are the Binder
Just mix chia-seed & water together and set aside to “gel.” This will be the binder for the rest of the ingredients. Next, place chopped nuts (I used pecans & pumpkin seeds), flaxseed meal, nutritional yeast and dried oregano in a bowl and give it a toss.
Pour the chia & water mixture into the nut mixture, stir together – then pour onto a baking sheet, spread it to 1/4″ thick and bake it for 20-minutes, then flip it over – bake another 20-minutes. Cut into cracker squares and enjoy it!
Delicious on their own – but really good with this Garlicky-Hummus.

Chia-Seed Snack Crackers | PLANT-BASED
Ingredients
- ½ cup chia seeds
- 1 cup water
- ½ cup pecans, chopped
- ½ cup pumpkin seeds
- ¼ cup ground flaxseed
- ¼ cup nutritional yeast
- 1 tsp dried oregano
- ¾ tsp kosher salt, pepper to taste
Instructions
- Pre-heat oven to 350-degrees. Line a baking sheet with parchment paper. Set aside.
- Add chia-seeds and water to a pourable container. Stir and set aside – BUT be sure to stir occasionally as you assemble the rest of the ingredients. Chia-seeds coagulate very quickly with liquid, and will seize-up if you don’t stir every couple minutes or so.
- In a medium mixing bowl, place the rest of the ingredients and toss to combine.
- Pour chia-seed mixture into the nut mixture. Mix to combine.
- Pour onto the parchment paper, and use your hands or a spatula to press the cracker mixture to about 1/4″ thick.
- Bake 20-minutes. FLIP, and bake another 20-minutes.
- Remove and cut into squares while still warm. Place on wire rack to finish cooling.
