About 30-minutes to make including baking!
So here’s the deal – part of my M.O for keeping the scale to a dull roar during the holidays, is having a good smattering of healthy options available. This is especially true for parties and holiday dinners. Filling up on healthy (and deelish) options, means I (probably) won’t go completely bananas on indulgences. Unless I’ve had a few cocktails. Then all bets are off.
These little mini-bites, made with riced cauliflower and sharp cheddar for extra flavor, are sort of similar to my favorite go-to, mini-egg muffins. They’re super simple to make, healthy, tasty….and…..what else……Oh! They present beautifully on a chic white platter, sprinkled with minced chives for a little color and festivity. Try!!!!
Heads-up: Buy pre-riced, bagged cauliflower – it’ll save you a ton of time. You can find it in almost any mainstream grocery or specialty store, in the produce section. It’s usually near the pre-bagged lettuce and salads.
Lite! Elegant Cauli-Cheddar & Chive Bites
Ingredients
- 2 large eggs
- Pinch of salt & pepper
- 16 oz bag of riced cauliflower
- 1 cup sharp cheddar cheese, shredded
- ½ cup chopped fresh chives + a little more to garnish
- Cooking spray
Instructions
- Preheat oven to 400-degrees. Spray a 24 mini-muffin tin with cooking spray. Be sure to spray bottoms and sides well to avoid a sticky situation. Just sayin’.
- In a large mixing bowl, or if you have one – a large measuring bowl with a pour spout…..whisk the eggs and salt & pepper until incorporated. Add your riced cauliflower, cheddar cheese and chives. Stir until incorporated.
- Either pour or ladle the mixture about 1/4″ from the top of each muffin tin, place in the oven & bake for about 20-25 minutes. Remove from oven and let the bites cool in the pan for about 5 minutes.
- Remove from the tin, place on a serving platter & make it pretty by sprinkling minced chives all over the pieces and plate. Can be served warm or room temp. Happy Holidays!
