Healthy Breakfasts All Week Long, Baby!
I’ll let you in on a “secret”….. eating healthy is a lot easier than people think. It’s really just a matter of finding a handful of recipes that you like – and making them in bulk, such that you have several meals for the week.
This Mediterranean-influenced Bulgur-Wheat bowl fits the bill! Not only is it packed full of fiber, vitamins, minerals, antioxidants and anti-inflammatory properties (and good fats!), but it’s clean, delicious, filling and SO damn easy to make & store for a week of healthy heat-and-eat breakfasts!
And of course there is NO Added-Sugar which means if you’re on my California Sugar Cleanse – this is a YES Recipe!!!
The bulgur gets infused-flavors from coconut milk, ground cinnamon and vanilla, before stirring in frozen cherries, chopped almonds and fresh mint! Pour a splash of almond milk over your bowl, and enjoy a seriously yummy, healthy breakfast that will keep you full for a few hours.

Use this recipe as a template from which to experiment with different fruits, nuts, numilks and fresh herbs. You can even swap in Rolled Oats if you don’t have Bulgar wheat. Try Blueberries, strawberries & fresh basil for a twist!
Bulgur Breakfast Bowl w/Cherries, Almonds & Fresh Mint
Makes 6-8 Servings
INGREDIENTS:
+ 3 ½ cups Nutmilk (I used 1 can Coconut Milk, remaining liquid of Coconut Water). Unsweetened Vanilla Almond Milk works great also.
+ 2 cups Bulgur Wheat
+ 1.5 tsp group cinnamon
+ 1.5 tsp vanilla extract
+ 2 – 2.5 cups frozen cherries
+ 1 cup raw almonds, roughly chopped
+ ½ cup fresh mint, roughly chopped or torn
DIRECTIONS:
1. In a large saucepan, Add Nutmilk, Bulgur & Cinnamon. Give it a stir.
2. Bring to a boil, reduce heat to low, cover and let sit for 15-20 min.
3. After 20 min, stir in Vanilla, Cherries, Almonds & Fresh Mint.
Dish up and add a splash of nutmilk. Store in airtight container in fridge for healthy Breakfasts all week!
