A final sprinkle of crushed (no-sugar) red & white peppermint candy gives the Bites a fun, festive holiday flair – AND adds a nice little crunch & freshness to perfectly balance the Bites.

Basic, Simple, Real Ingredients
Protein-rich Quinoa forms the base of the bites, followed by Dark Cocoa Powder, Unsweetened Almond Butter, Chocolate Monk-Fruit Sweetener & Shredded Coconut. Finally – we drizzled each Quinoa Bite with a little No-Sugar Chocolate and a dusting of crushed No-Sugar Candy Canes for a super festive, deliciously healthy holiday bite!
The Bites are bound together with unsweetened Almond Butter, and whipped egg whites, then baked at 350-degrees for 10-minutes. Let them cool, then drizzle with No-Sugar Chocolate & sprinkle with crushed peppermint candy.

Microwave No-Sugar Chocolate & Coconut Oil Until Melted

In the spirit of staying on-brand, the chocolate drizzle is easy! I used No-Sugar Bake Believe Dark Chocolate Chips. Just place in a microwavable bowl with a touch of Coconut Oil, and heat until melted. Super easy!

Just as Satisfying as Any Holiday Cookie…. No, Seriously
IMO, these Almond Joy Quinoa Bites are just as yummy as any holiday cookie – but WAY healthier. Gluten-Free & Sugar-Free, they’re perfect to keep around the house for Treats or Snacks instead of sugary cookies ….. OR place them on a pretty platter for guests.


Almond Joy QUINOA BITES! (Sugar-Free, Gluten-Free)
Ingredients
- 1½ cups Quinoa, cooked according to package instructions
- 1½ cups Shredded Coconut, unsweetened
- 2 tbsp Dark Cocoa Powder, unsweetened
- ¼ cup Coconut Flour
- 1 tbsp Chocolate Liquid Stevia (sweetener)
- 1½ tsp Almond Extract
- 3 tbsp Almond Butter, unsweetened
- 3 Egg Whites
- ⅓ cup Sugar-Free Dark Chocolate Chips
- 1 tsp Coconut oil, melted
- ⅓ cup Sugar-Free Peppermint Candies, crushed
Instructions
- Pre-heat oven to 350-degrees.
- In a large mixing bowl, add cooked Quinoa, Shredded Coconut, Cocoa Powder, Coconut Flour, Chocolate Stevia and Almond Butter. Toss together to incorporate.
- In a small mixing bowl, beat egg whites with a hand-mixer just until frothy.
- Add 2/3 of the egg mixture to Quinoa mixture and stir to combine. Reserve the other 1/3 just in case the Quinoa mixture is too dry to form into balls. If so – add it in, obviously.
- Form the mixture into 2″ balls. You’ll need to squeeze each “ball” first in order to condense, then shape into the ball. Place on a baking sheet.
- Bake in 350-degree oven for 10-minutes. Transfer to a wire rack & let cool while you make the Chocolate drizzle.
- Make the Chocolate drizzle: Place chocolate chips & coconut oil in a small microwavable bowl. Microwave in 30-second increments, stirring each time until chocolate is melted and drizzly.
- Crush Your Mints: Place mints in a baggie & crush with a meat mallet until nice and sprinkly.
- Decorate! Drizzle chocolate over the Quinoa Bites then decorate with peppermint sprinkles. Taste-test a couple and enjoy
