Ezekiel bread forms the base of my grilled veggie sammich! Pesto spread, grilled eggplant, avocado, roasted red bell & a lil onion make this a can’t miss!
You know when you just want a big, fat juicy sandwich?
Well ok – I do! Truth – I usually make this open-faced to cut down on the carbs, but sometimes if I’m feeing really rebellious I’ll have TWO slices of Ezekiel bread. Sometimes ya just gotta give the whole carb-thing the middle-finger.
I’ve used eggplant, zucchini, onion & roasted red bell pepper for this recipe, but feel free to use any veggie combo you like. I sometimes swap out the pesto for spreadable goat or low-fat cream cheese. Just depends on the day! Oh – I also buy jarred roasted red bell pepper for convenience. I mean – do you really want to roast them on the hot stove in the summer? NO!

Grilled Veggie Sammich
Ingredients
- Olive oil cooking spray
- 2-3 slices eggplant, sliced 1⁄2” thick
- 4 slices zucchini, 1/4″ thick
- 1 slice onion, sliced 1⁄2” thick
- 1-2 slices Ezekiel bread, toasted (1-slice makes this open-faced for fewer carbs)
- Pesto (I use basil & pine nut – but use your favorite)
- ¼ medium avocado, sliced
Instructions
- Heat a grill pan or frying pan over medium-high heat. While it’s heating, spray both sides of eggplant, zucchini and onion with cooking spray, seasoning both sides with salt & pepper. Toast the Ezekiel bread.
- When the pan is hot, place all the veggies into the pan, grilling each side until they are tender. Meanwhile, slice 1/4 of an avocado and wipe excess liquid from the jarred roasted red bell pepper.
Assemble
- Spread the Ezekiel toast with Pesto. Layer on the eggplant, zucchini, avocado and onion. Slice in 1/2 and enjoy!
