Protein Pancakes with Blueberry Compote

Delicious and filling, blueberries are packed with antioxidants – and this incredible pancake is made without flour! Just pure protein powder for muscle repair and lean definition. One of my go-to favorites.

Ingredients
  

Pancakes

  • 2 scoops vanilla protein powder (non-dairy)
  • 2 eggs – I use organic
  • 1 tsp baking powder
  • Splash of water
  • Olive oil cooking spray

Blueberry compote

  • 2 cups blueberries – fresh or frozen
  • 2 tsp honey
  • Squeeze of lemon + splash of water
  • 1 tsp cornstarch + ¼ c water

Instructions
 

  • In a medium saucepan (no heat yet!) place the blueberries, honey, squeeze of lemon and splash of water (about 1 TB). Mix to incorporate & set it aside to macerate while preparing pancake mixture.

Pancakes:

  • In a medium mixing bowl, whisk together the whey protein powder, eggs and baking powder.
  • Add just enough water to make the mixture into a pancake consistency.
  • Set aside and return to blueberry mixture to make the compote.

Blueberry Compote

  • Place saucepan with blueberries on medium heat, stirring to cook the berries.
  • I squish the berries a little to push the process, but I’m really impatient.
  • In a small dish, make a slurry from the cornstarch and water. This is what thickens the compote!
  • Raise heat to medium-high, pouring a LITTLE of the slurry in at a time – while whisking. Mix until it’s the desired consistency that you like. Set aside.
  • Now, just cook the pancakes. Basic. Non-stick frying pan on medium heat. Spray with a little cooking spray & cook ‘em up. Divide evenly between 2 plates, slathering with the blueberries!

Notes

  • Whole-Food Plant-Based eating allows for some limited dairy, eggs or meat, for that matter. While we do steer clear of meat and dairy, you may see an egg or 2 from time to time 😉
  • Option: Try slathering pancakes with PB Fit, Peanut Butter Powder. 90% less fat then regular peanut butter! It’s delicious! Check it out here.
  • I usually save the 2nd serving for later. Just heat pancakes and compote in the microwave. Great protein snack and literally feels like you’re in bizzaro-land where there’s a healthy iHop.
