Don’t judge! This is actually a pretty light dish! The butter and honey are minimal. Just enough to impart a rich, slightly sweet flavor profile. Deelish!
Ya gotta love it when something delicious and holiday-worthy is also decently light and healthy. This is one of those dishes. The star of the show are the sweet potatoes, which are high in fiber, vitamins B, C, potassium, magnesium and copper. They get their orange color from beta-carotene, which is a pigment and an antioxidant. Score!

Roasted Sweet Potatoes with Cinnamon-Honey-Butter

Ingredients
- 2½ lbs sweet potatoes, peeled and diced into 1” cubes
- 5 tbsp unsalted butter, melted
- 3 tbsp honey
- 1 tsp cinnamon
- ½ tsp kosher salt
Instructions
- Preheat the oven to 350 degrees. Spray a 13×9” baking dish with non-stick cooking spray.
- In a small mixing bowl whisk together melted butter, honey, cinnamon and salt.
- Place sweet potatoes in the baking dish. Pour butter, honey and cinnamon mixture over the top, toss to coat.
- Spread into an even layer and bake for about 50 minutes, tossing the potatoes 2-3 times during the baking process. Serve warm. That’s it!
