Way lighter, just as delicious. Promise!
Ok truth – on Thanksgiving we for sure like to indulge and enjoy at our house, but honestly going overboard on the excess cream, butter and sugar in traditional recipes, just makes everyone feel ill and grumpy afterwards. Like not in the holiday spirit, lol.
Instead, I now balance indulgences like the pies and desserts by making most dishes healthier than a traditional recipe. The great thing? My family never notices the difference – they just feel better than if I’d gone overboard with all of the creams and butters. These creamy, rich mashed potatoes are healthier than traditional versions and you’ll never know the difference!
Skinny Garlicky Mashed Potatoes

Ingredients
- 4 lbs Russet potatoes, peeled and cubed
- 8 large garlic cloves, peeled and lightly crushed
- ½ cup light sour cream
- 1 cup chicken broth (or vegetable broth)
- ½ cup skim milk
- 2 tbsp unsalted butter, melted
- kosher salt and fresh ground pepper to taste
- 2 tbsp fresh thyme
- Chives, chopped for garnish
Instructions
- Put potatoes and garlic in a large pot with salt and enough water to cover the potatoes. Bring to a boil, cover and reduce heat.
- Simmer for 20 minutes or until potatoes are tender, drain and return potatoes and garlic to the pot.
- Finally, add sour cream and rest of the ingredients. Using a potato masher, mash until smooth. You can use a handheld mixer but be sure not to overmix the potatoes or they’ll turn gummy. No Bueno!
- Season with salt and pepper to taste. Put in a pretty serving bowl, sprinkle with a few chopped chives for color and enjoy!
