Spinach & Brie Egg-White Omelette

Using egg-whites lends way for a little Brie! Stuffed with fresh baby spinach sautéed in heart-healthy olive oil, this is a fresh & fit start to your morning!


 

Start your day off right with protein packed egg-whites & fresh baby spinach – with a little treat of creamy brie. Yessss!!!

I’m not a huge “breakfast” person. I mean, I LIKE breakfast foods – don’t get me wrong, but I workout in the morning and prefer something fast and light. This omelette isn’t as fast to make as an overnight-chia seed bowl, but it’s so delicious and fast enough to warrant a little extra time every once in a while!

Spinach & Brie Egg-White Omelette

Ingredients
  

  • ½ tbsp olive oil & cooking spray
  • 2 tbsp yellow onion, chopped
  • 1-1.5 cups fresh baby spinach leaves (spinach will cook down a LOT!)
  • ½ cup egg whites
  • 1 oz brie cheese (substitute low-fat feta if preferred)

Instructions
 

Spinach Mixture

  1. Heat the olive oil in a small non-stick frying pan over medium heat.
  2. Add chopped onion. Season with salt & pepper. Sauté until tender (about 2-3 min).
  3. Add in the spinach, season with salt & pepper. Sautee until the spinach begins to wilt.
  4. Add 1TB of water – turn heat down to low & cover for about 1 minute. This allows the spinach to wilt down quicker. I’m not patient.
  5. Remove to a plate, while you make the omelette.

Omelette

  1. Over medium heat, add the egg whites to the non-stick pan (a little cooking spray may be needed). As eggs cook, gently push sides towards center of pan, tipping the pan to allow excess liquid to flow underneath.
  2. Once the top of the omelet is just a little liquid-y, flip it. Remove from heat and add your fillings: Brie + spinach mixture. The remaining heat will melt the brie & warm the fillings.
  3. Serve with fresh honeydew melon, cantaloupe or your favorite citrus fruit!
