I love summer! Not just because of the weather – I mean, we live in San Diego so it’s pretty much summertime year-round. I’m talking about all of the amazing in-season fresh fruits! Every Sunday, Oliver and I ride our bikes down to the Farmer’s Market near our home – and clean up on every fresh fruit we can carry! First on the list? Strawberries. Always strawberries.
This amazing salad is the perfect light concoction of fresh strawberries, juicy red grapes, greens, goat cheese and crunchy walnuts. Tossed in a light balsamic vinaigrette – it’s a keeper!
Summer Strawberry Salad with Spring Mix, Goat Cheese and Walnuts

Ingredients
Salad Ingredients
- 6 cups spring mix salad
- 1 cup red seedless grapes, halved
- 1 cup strawberries, sliced
- ⅓ cup walnuts, toasted or raw
- 2 oz goat cheese, crumbled
Dressing
- ¼ cup + ¼c extra virgin olive oil
- ¼ cup + ¼ c good balsamic vinegar
- ½ tsp + ½ tsp dried basil
- 2 tsp + 2 tsp dijon
- Pinch of salt to taste
Instructions
- In a large mixing bowl, toss together all of the salad ingredients.
- In a small bowl, whisk together all of the dressing ingredients. Pour half over the salad, toss well. Taste, and add more dressing if desired. Divide between plates and enjoy on its own as a light dinner, or as an accompaniment to your meal. Either way – it’s yummy!
