So the story goes somethin’ like dis: Last week I was filming a quick recipe video for my Vanilla-Latte Chia Beauty Breakfast (which is served refreshingly cold right from the fridge) – when my sister nicely reminded me that unlike Southern California – most parts of the country are actually experiencing something called….. WINTER, and it’s Freaking cold!!

“Maybe, (she says with extra diplomacy)….. you should think about making a few warm, cozy breakfast recipes, too. Brilliant! Why didn’t I think of that?

The first flavor profile that came to mind – CHAI! Even better – Warm Chai flavored Overnight Oats with protein & fiber rich Chia Seeds (both of which are Radiance-Boosting foods, btw)…

Chai is….

Warm, spicy, cozy and complex – the word Chai is actually the Hindi word for “tea,” referring to a mix of spices steeped into something like a tea-like beverage. It’s a mixture of Cinnamon, Nutmeg, Ginger, Cardamom, Cloves & Allspice.

Make your own CHAI SPICE MIX & keep it on hand!

Tastes like a treat – but it’s actually a healthy, Plant-Based breakfast or snack! Top with non-dairy topping & make it a dessert.

Vanilla CHAI Overnight Oats & Chia | PLANT-BASED

Ingredients
  

  • 2 cups vanilla almond milk, unsweetened
  • 3 tbsp maple syrup
  • tsp tsp vanilla extract
  • ¾ tsp ground cinnamon
  • ¾ tsp ground ginger
  • ¼ tsp ground cardamom
  • ¼ tsp ground cloves
  • a few turns of fresh cracked black pepper
  • ¼ cup chia seeds
  • cup cup rolled oats

Instructions
 

  • In a medium sized mixing bowl, whisk together all of the ingredients except for the chia seeds and oats.
  • Next, add in chia seeds and oats. Whisk to incorporate and to activate the gelling of the chia seeds.
  • Place in fridge and let set at least 4-hours or overnight.
  • Serve: Scoop desired serving into a bowl & heat to warm. Pour a little almond milk on top if ya like.

Notes

Heads-up: If you made your CHAI SPICE MIX – use 2 tsps of that instead of the ground spices above. 😉
