Happy Valentine’s Week!
Have I got the perfect little Valentine’s Day treat for YOU! Salted Caramel Truffles. SO decadently delicious, and best of all – made with 5 easy ingredients, in a Blender or VitaMix.
I tested the recipe yesterday, and uhhh – Oliver ate 6 of the 8 before the day was over. I snagged 2 of them. Geez. Gotta be quick around here ;-/. Make them for a Valentine’s Day treat instead of typical sugary chocolates.
They’re just as good if not better AND you won’t get that annoying sugar-crash.

Vegan SALTED CARAMEL TRUFFLES | 5-Ingredients

Ingredients
- 8 oz medjool dates, pitted
- ¼ cup peanut-butter, no added sugar
- Pinch of kosher salt
- 1 tsp vanilla extract
- 1 cup no sugar chocolate chips
- 1 tbsp coconut oil (optional)
- Pink Himalayan salt for sprinkling on top
Instructions
- Soak pitted dates in warm water for 15-minutes, drain.
- Line baking sheet w/parchment paper.
- In a VitaMix or Blender, add Dates, Peanut-butter, salt & Vanilla Extract – blend until incorporated.
- Scoop & roll into 8-12 balls, placing them on parchment paper. Freeze 15-20 minutes.
- Microwave chocolate chips & coconut oil in 30-second increments, stirring in between until melted into a sauce.
- Remove balls from freezer, roll each through the chocolate sauce & place back onto the baking sheet. Sprinkle with a little Himalayan Seas Salt.
- Freeze for another 15-minutes.
