In a large saucepan over medium heat, heat the olive oil. Next add onions & garlic – season with salt & pepper & sauté until tender. Add & bring to a boil all of the remaining ingredients except for the kale. That will go in last.
Cover, reduce heat to low and cook for about 20– 25 minutes, stirring occasionally until lentils are soft. Add more broth if needed.
Remove saucepan from heat. Stir in the chopped kale, allowing the heat to wilt it. Fill a bowl and enjoy! BONUS – makes plenty for lunch tomorrow!
