Oliver calls this a “ladies soup” because at 6″2 & 220-lbs, umm….this wouldn’t even make a dent in his appetite lol! For us girls – it’s really a perfect lunch or light dinner. The lentils give it enough heartiness to feel full, yet the kale & veggies leave you feeling pretty fricking awesome!

Ladies Lentil & Kale Soup

Ingredients
  

  • 1 tbsp olive oil
  • ½ yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups lentils—dried, uncooked
  • 1 32-oz container of vegetable broth
  • 1 cup baby carrots, cut into 1⁄2” pieces
  • 1 14 oz. can diced tomatoes (undrained, organic)
  • 1 8 oz. can tomato sauce (organic)
  • ½ tsp ground cumin
  • 1 tsp salt
  • ½ tsp dried red pepper flakes (optional)
  • 2 cups kale, chopped, stems removed

Instructions
 

  • In a large saucepan over medium heat, heat the olive oil. Next add onions & garlic – season with salt & pepper & sauté until tender. Add & bring to a boil all of the remaining ingredients except for the kale. That will go in last.
  • Cover, reduce heat to low and cook for about 20– 25 minutes, stirring occasionally until lentils are soft. Add more broth if needed. 
  • Remove saucepan from heat. Stir in the chopped kale, allowing the heat to wilt it.  Fill a bowl and enjoy! BONUS – makes plenty for lunch tomorrow!
