In a medium mixing bowl, whisk together Coffee, Almond Milk, Vanilla, Maple Syrup and Lucuma, if using.
Pour in Chia Seeds and give it a good whisk.
Place in fridge overnight – or at least 4-hours.
BE SURE and go back to the fridge after the first 20-minutes and give the mixture another good stir. Chia seeds coagulate really quickly, so you’ll want to stir a few times in the beginning.
SERVE: Scoop into a bowl and enjoy. OR Make it into a healthy treat by adding a little non-dairy whipped cream
