Place all ingredients into a blender (except blueberries & optional maple syrup), blend until everything is incorporated.
Fold in 1/2 cup of the blueberries. Keep the rest to scatter atop pancakes before serving.
Heat a non-stick pan over medium-heat. Spray with a touch of cooking spray.
Pour in batter, making pancakes as large or small as you wish. When the cakes are bubbling and cooked around the edges – flip and cook anther 1-2 minutes.
Serve: Sprinkle fresh blueberries on top and eat as is, OR drizzle a tablespoon of maple syrup on top. Love it!
