medjool dates

cup
peanut-butter
, no added sugar
Pinch of kosher salt

tsp
vanilla extract
1
cup
no sugar
chocolate chips
1
tbsp
coconut oil
(optional)
Pink Himalayan
salt for sprinkling on top
Instructions
Soak pitted dates in warm water for 15-minutes, drain.
Line baking sheet w/parchment paper.
In a VitaMix or Blender, add Dates, Peanut-butter, salt & Vanilla Extract – blend until incorporated.
Scoop & roll into 8-12 balls, placing them on parchment paper. Freeze 15-20 minutes.
Microwave chocolate chips & coconut oil in 30-second increments, stirring in between until melted into a sauce.
Remove balls from freezer, roll each through the chocolate sauce & place back onto the baking sheet. Sprinkle with a little Himalayan Seas Salt.
Freeze for another 15-minutes.
