  • Soak pitted dates in warm water for 15-minutes, drain.
  • Line baking sheet w/parchment paper.
  • In a VitaMix or Blender, add Dates, Peanut-butter, salt & Vanilla Extract – blend until incorporated.
  • Scoop & roll into 8-12 balls, placing them on parchment paper. Freeze 15-20 minutes.
  • Microwave chocolate chips & coconut oil in 30-second increments, stirring in between until melted into a sauce.
  • Remove balls from freezer, roll each through the chocolate sauce & place back onto the baking sheet. Sprinkle with a little Himalayan Seas Salt.
  • Freeze for another 15-minutes.
