Pre-heat oven to 350-degrees. Line a baking sheet with parchment paper. Set aside.
Add chia-seeds and water to a pourable container. Stir and set aside – BUT be sure to stir occasionally as you assemble the rest of the ingredients. Chia-seeds coagulate very quickly with liquid, and will seize-up if you don’t stir every couple minutes or so.
In a medium mixing bowl, place the rest of the ingredients and toss to combine.
Pour chia-seed mixture into the nut mixture. Mix to combine.
Pour onto the parchment paper, and use your hands or a spatula to press the cracker mixture to about 1/4″ thick.
Bake 20-minutes. FLIP, and bake another 20-minutes.
Remove and cut into squares while still warm. Place on wire rack to finish cooling.
