Erythritol (sugar substitute)

coconut oil, melted

vanilla extract

almond flour

coconut flour

baking soda

pumpkin pie spice

Topping Options

Pepitas
Mixture of 3 tbsp erythritol & 1/2 tsp pumpking pie spice
Instructions
Heat oven to 350.
Lightly spray 12 non-stick muffin holes with cooking spray.
In a large bowl, mix all ingredients through vanilla extract, until combined.
Add in remaining ingredients. Mix to incorporate.
Spoon evenly into prepared muffin holes.
Sprinkle with desired toppings.
Bake 25 minutes or until an inserted toothpick comes out clean. Enjoy!
