I KNOWWWW!!!! I’ve been on a total baking-bender lately – hope you don’t mind ;-/. The weather turns and suddenly I’m the Pilsbury Dough Girl. Lately, Chez-Pelly, it’s been all about creating yummy, healthier versions of our favorite muffins and brunch breads for your fall brunching pleasure.

These Perfect Paleo Pumpkin Spice Muffins are warm, welcoming and the ideal way to enjoy the season while still keepin’ it healthy. They’re Gluten-Free, Sugar-Free and get their moisture (I really tried not to use the “M” Word) and most of their sweetness from coconut oil (No Butter!) and mashed bananas, respectively.

Sprinkle with Pepita Seeds for extra crunch or Pumpkin Pie Spice & Sugar-substitute for extra sweetness. Your choice!

Create your own add-ins, too! Sometimes I add raisins to half & blueberries to the other half. I prefer the blueberries.

Keep an eye on your cans

Be sure to grab canned Pumpkin Puree not Pumpkin Pie Mix. If you’re in a hurry, it’s super easy to grab the wrong can!! Pumpkin Pie Mix is packed with sugar and other additives. Pumpkin Puree is just as it sounds. Pureed pumpkin and that’s it.

Make sure to grab Pumpkin Puree NOT Pumpkin Pie Mix which is packed with sugar & additives.

Sometimes I double the recipe & bring half to my parents. I’m very popular on those days.

Super easy & fast. About 10-minutes to prepare and 20-25 minutes to bake. Store them in an airtight container in the fridge – if they make it that far lol.

Ingredients
  

  • 1 cup canned pumpkin pie puree
  • 2 small bananas, mashed
  • ½ cup Erythritol (sugar substitute)
  • 2 eggs
  • cup coconut oil, melted
  • 1 tsp vanilla extract
  • cups almond flour
  • ¼ cup coconut flour
  • ½ tsp salt
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice
  • ¾ tsp cinnamon

Topping Options

  • ½ cup Pepitas
  • Mixture of 3 tbsp erythritol & 1/2 tsp pumpking pie spice

Instructions
 

  • Heat oven to 350.
  • Lightly spray 12 non-stick muffin holes with cooking spray.
  • In a large bowl, mix all ingredients through vanilla extract, until combined.
  • Add in remaining ingredients. Mix to incorporate.
  • Spoon evenly into prepared muffin holes.
  • Sprinkle with desired toppings.
  • Bake 25 minutes or until an inserted toothpick comes out clean. Enjoy!
