Bulgur Wheat Breakfast Bowl w/Cherries, Almonds, Fresh Mint (PLANT-BASED)

Ingredients
  

  • cups + 3 ½ cups Nutmilk (I used 1 can Coconut Milk, remaining liquid of Coconut Water). Unsweetened Vanilla Almond Milk works great also.
  • 2 cups Bulgur Wheat
  • tsp group cinnamon
  • tsp vanilla extract
  • 2-2½ cups cups frozen cherries
  • 1 cup raw almonds, roughly chopped
  • ½ cup fresh mint, roughly chopped or torn

Instructions
 

  • In a large saucepan, Add Nutmilk, Bulgur & Cinnamon.  Give it a stir.
  • Bring to a boil, reduce heat to low, cover and let sit for 15-20 min.
  • After 20 min, stir in Vanilla, Cherries, Almonds & Fresh Mint.
  • Dish up and add a splash of nutmilk.  Store in airtight container in fridge for healthy Breakfasts all week!
