Watermelon, Feta & Fresh Mint Salad with Lime Vinaigrette | Healthy!

fresh watermelon cut into bite-sized chunks
1½
cups
fresh feta
cut into 1/2″ cubes
1
cup
fresh mint leaves
loosely packed, stems removed
3
limes
juiced
¼
cup
extra virgin olive oil
2
tbsp
honey
Kosher salt & pepper to taste
Instructions
Place cubed watermelon in a colander and allow to drain-off excess water as you prepare the rest of the salad.
Cut feta into 1/2″ cubes and set aside.
Remove mint leaves from stems, set aside.
Make the Vinaigrette: In a small mixing bowl, juice 3 limes. Add in olive oil and honey, whisking until emulsified.
Add salt & pepper to taste.
Assemble
In a pretty serving bowl, place watermelon and feta.
Tear fresh mint leaves into the mixture.
Wait until you’re ready to serve, before tossing with the Vinaigrette! You want it to be fresh 😉
