Ladies Lentil & Kale Soup
Ingredients
- 1 tbsp olive oil
- ½ yellow onion, diced
- 2 cloves garlic, minced
- 2 cups lentils—dried, uncooked
- 1 32-oz container of vegetable broth
- 1 cup baby carrots, cut into 1⁄2” pieces
- 1 14 oz. can diced tomatoes (undrained, organic)
- 1 8 oz. can tomato sauce (organic)
- ½ tsp ground cumin
- 1 tsp salt
- ½ tsp dried red pepper flakes (optional)
- 2 cups kale, chopped, stems removed
Instructions
- In a large saucepan over medium heat, heat the olive oil. Next add onions & garlic – season with salt & pepper & sauté until tender. Add & bring to a boil all of the remaining ingredients except for the kale. That will go in last.
- Cover, reduce heat to low and cook for about 20– 25 minutes, stirring occasionally until lentils are soft. Add more broth if needed.
- Remove saucepan from heat. Stir in the chopped kale, allowing the heat to wilt it. Fill a bowl and enjoy! BONUS – makes plenty for lunch tomorrow!
