7-Ingredients, Elegant & Less Than 10-Minutes to Make!
This Watermelon & Feta Salad is one of the healthy recipes from my Youtube “Summer Workouts & Lite Recipes” Series! I love this salad for a number of reasons…. It’s super easy, it’s fresh and delicious and it’s elegant enough for company. The colors of juicy red watermelon, white feta and bright green fresh mint just say “summer!!!”
3 Key Tips
PRE-CUT WATERMELON: First, I will absolutely take short-cuts when I can. I have no shame. I bought pre-cut watermelon which drastically cuts down on the preparation time.
BLOCK FETA: Second, make sure to use fresh feta in a block – not crumbled. The block feta is firm & will keep it’s shape better which makes for a much prettier result. Crumbled feta mixes with the lime vinaigrette, and gives a muddy/milky appearance. Not as pretty!
FRESH SQUEEZED LIME: Finally, be sure to use fresh squeezed lime juice and fresh mint! You don’t want to use bottled lime juice – it will ruin the salad. When a dish has such minimal ingredients, it’s paramount to use fresh and best quality!

Watermelon, Feta & Fresh Mint Salad with Lime Vinaigrette | Healthy!
Ingredients
- 12 cups fresh watermelon cut into bite-sized chunks
- 1½ cups fresh feta cut into 1/2″ cubes
- 1 cup fresh mint leaves loosely packed, stems removed
- 3 limes juiced
- ¼ cup extra virgin olive oil
- 2 tbsp honey
- Kosher salt & pepper to taste
Instructions
- Place cubed watermelon in a colander and allow to drain-off excess water as you prepare the rest of the salad.
- Cut feta into 1/2″ cubes and set aside.
- Remove mint leaves from stems, set aside.
- Make the Vinaigrette: In a small mixing bowl, juice 3 limes. Add in olive oil and honey, whisking until emulsified.
- Add salt & pepper to taste.
Assemble
- In a pretty serving bowl, place watermelon and feta.
- Tear fresh mint leaves into the mixture.
- Wait until you’re ready to serve, before tossing with the Vinaigrette! You want it to be fresh 😉
