These Chocolate Peanut-Butter Energy Bites (kept in the freezer!) are SO decadent tasting, you won’t believe they’re healthy and actually good for you! Packed with Oats, Chia Seeds, Flax Seeds, Oat Bran and unsweetened Peanut-Butter, you’ll benefit from Fiber, Protein, Vitamins, Minerals & Healthy Fats – all rolled into one delicious Energy Bite!
I split the batch in half, and rolled one half through finely chopped peanuts – and the other half through Hershey’s Dark Cacao Powder, unsweetened – obvi. I LOVE LOVE the way a side of fresh berries adds a refreshing note to the chocolate version. SO good!

These really ARE that flexible. For an easy breakfast, I’ll have 1 or 2 with a side of fresh berries (extra anti-oxidants!). Other times for an afternoon snack that satisfies a sweet tooth and that need for “something fatty” without going overboard. They really satisfy!
due to the peanut-butter, SO if you’re lookin’ to lose or
maintain weight (and who among us doesn’t at least want to
keep a lid on it?)… stick to having only 1 or 2 in any given day.
Honestly, they’re so satisfying that you probably won’t want more than that anyway. PLUS – you keep them in the freezer, so it’s hard to gobble them down. I’ve tried. 😉
Use any Nut-butter you like (Almond Butter works well). Just minutes to make – then into the freezer for 3-4 hours. Done!
A side of fresh berries add extra anti-oxidants to start-off the day right!
Chocolate Peanut-Butter ENERGY BITES | Sugar-Free, Gluten-Free
Ingredients
- 1 cup Rolled Oats, gluten-free
- ½ cup Oat Bran, gluten-free
- ¼ cup Chia Seeds
- ¼ cup Flax Seeds
- ⅓ cup Shredded Coconut, unsweetened
- ½ tsp Kosher Salt
- 1 cup Peanut-Butter, unsweetened
- 2 tsp Vanilla Extract
- 1 cup Peanuts, unsalted, chopped. Divide in half.
- ½-¾ cup Maple-Flavored Monk Fruit, natural sweetener (to taste)
- ½ cup Dark Cocoa Powder, for rolling
Instructions
- Line a baking sheet with parchment paper. Set aside.
- In a large mixing bowl, place all the ingredients EXCEPT for 1/2 of the chopped peanuts and the Cocoa Powder. You’ll be rolling your balls through them.
- Place other half of chopped Peanuts & Cocoa Powder in 2 separate bowls, for rolling later. Set aside.
Mix
- Mix the ingredients lightly, with an electric mixer just to combine everything.
Roll Your Balls
- Roll into 1.5 – 2″ balls. Roll half through chopped peanuts & the other half through the cocoa powder. Place on baking sheet, and put into the freezer for 3-4 hours.They’re ready to eat!!! Enjoy!
My husband n I love these. I enjoy having one for breakfast before I workout. And so easy to put together is the extra bonus.
