Kale & Pineapple Summer Smoothie

Hail! Hail! Kale! I know… dumb jokes run in family, what can I say. Kale is not only one of the 10 Healthiest Greens, it’s also one of the most nutrient dense foods on the PLANET. Yes – the planet.

Although I do love a good Kale Salad, there’s not always time to make one, Right!? The solution? Throw it into a VitaMix with a few other goodies and hit “Blend!”

In this case – we went a little Tropical, with frozen Pineapple and a Banana. Add in coconut-milk yogurt for creaminess plus a spoonful of Peanut Butter for a healthy fat, and this is a totally yummy, healthy Plant-Based way to fuel your beautiful body. Truth!

What Kale Does For You:

Kale is full of protein & fiber, which makes you feel full! This means you eat less which translates into weight loss, and makes maintaining weight a little easier! Kale is high in protein, fiber, Vitamins A, B, C, and K, Folate, an omega-3 fatty acid, AND is packed with powerful antioxidants! 

Antioxidants work to protect you against free-radicals and cancers, fight off heart disease, and reduces inflammation throughout the body.  Translation – it’s good for you, eat it 😉

Ingredients
  

  • ¾ cup Almond Milk, unsweetened
  • ¼ cup non-dairy yogurt (we like coconut milk yogurt)
  • 1 tbsp Peanut Butter, unsweetened, no additives
  • 2 cups Kale, fibrous stem removed
  • 1 Medium Banana, sliced & frozen (if possible)
  • ¾ cup Pineapple, Frozen (if possible)
  • ½ cup ice (more, if the banana & pineapple aren’t frozen)

Instructions
 

  • Place ingredients into a VitaMix or Blender, in the order listed (they’ll blend better). This is the VitaMix that I have (in white). It’s a little pricey, but I use it SO MUCH – like, everyday – that it’s totally worth it!

Notes

This makes 1-serving, but you’ll get about 2 glasses out of it…heads up. I said 1-serving, because I want you to get all of the nutrients in the recipe. That being said – you can always share with a friend if you like ;-). You’re the Boss of you. Enjoy!
