If you like Banana-Cream Pie…. You will LOVE this healthy, Plant-Based, Overnight Breakfast Bowl made with banana, cottage cheese (yes!) oats and protein / fiber-rich chia seeds! Easy to make, just place in your fridge overnight and the next morning you’ve set yourself up for success with a healthy breakfast that’s just as delicious cold, as it is warm.
Double or triple the recipe, then divide into mason
jars with lids, for Grab-n-Go healthy breakfast or
snacks at the office. It’s totally up to you!
The Cottage Cheese Thing…..
I envisioned a few nose-wrinkles when I said “cottage cheese & bananas,” but honestly it isn’t gross, lol – promise! The low-fat cottage cheese is neutral in flavor but gives the dish that creamy-note expected in real Banana-Cream Pie.
Toppings are optional of course, but I gotta tell ya – adding toasted walnuts, toasted coconut, banana slices and cinnamon sends this over the top! I add another splash of almond milk and Boom – breakfast!
Healthy & Figure-friendly, it’ll keep you full until lunch! OR, have half for breakfast and half as a snack.
The Cottage Cheese is neutral in flavor, but adds the creamy-note you’d expect in a Banana-Cream Pie.

Banana-Cream Pie Overnight Chia-Oat Breakfast | PLANT-BASED
Ingredients
- 1 Banana Mashed
- ½ cup Low-Fat Cottage Cheese
- ¼ cup Vanilla Almond Milk Unsweetened
- 1 tsp Vanilla Extract
- ¼ cup Steel Cut Oats
- 1 tbsp Chia Seeds
Optional toppings
- 4-5 toasted walnuts,
- 1 tbsp toasted unsweetened coconut,
- Few banana slices
- Sprinkling of Cinnamon
Instructions
- In a small mixing bowl, mash together the Banana & Cottage Cheese (I used a potato masher). Give it a quick stir to ensure it’s all incorporated.
- Add in Almond milk, Vanilla, Oats & Chia Seeds – Mix together.
- That’s it! Place in fridge overnight.
- The next morning, just stir and top with walnuts, coconut, a few banana slices a shake of cinnamon and splash of almond milk if you like. Prefer it warm? No problem – just microwave for 30-seconds or so. Enjoy!
