Matcha matcha matcha…..Tea! If you haven’t yet jumped on the Matcha Tea wagon – you’re in for a treat! Although Matcha’s been used in ritual tea ceremonies since like, the 12th century – it’s only been rising in mainstream popularity since about 2015. Matcha Lattes, ice creams and even Matcha cookies and baked goods – it’s ubiquitous.

The reason? It’s SUPER good for you. Matcha has one of the highest Anti-Oxidant ratings around, as in 15x higher than blueberries plus tons of other benefits, including protection against some forms of cancers, improved focus, calming properties and help with weight loss. Combine it with Chia Seeds which house Fiber, Protein & Essential Fats – and you’ve got power-in-a-bowl.

Everything’s better with toppings, no? Fresh raspberries & blueberries are my favorite, with a sprinkling of chopped almonds and a little shredded coconut (unsweetened)!

Ingredients
  

  • 2 tbsp Chia Seeds
  • ½ cup milk (almond, oat, coconut, etc)
  • Splash of vanilla extract

Instructions
 

  • Stir and let it set for a few hours to absorb the liquid.
  • From there – add toppings like berries, nuts, shredded coconut and the like.
  • For flavor variations, add cinnamon or different spices, your favorite extract (almond extract is good too!). Oh – and if you LOVE chocolate pudding ….. you MUST try this.

Matcha Chia Pudding

Ingredients
  

  • 2 cups vanilla almond milk, unsweetened
  • 1-2 tsp Matcha Tea Powder (I used 2 in this recipe)
  • 1 tsp liquid vanilla monk fruit (a no-sugar sweetener)
  • ½ cup  chia seeds

Instructions
 

  • In a medium mixing bowl, whisk together milk, Matcha and liquid monk fruit sweetener until matcha is incorporated.
  • You can also give it a quick whir in a blender!Mix in the Chia Seeds. It will be very soupy – that’s normal! The seeds will soak up all of the liquid over the course of a few hours, making a pudding-like consistency.
  • Plan in fridge, coming back in an hour, to stir the mixture. Let sit for 3-4 hours. Dish it up and enjoy!!
