Crisp, refreshing and light
Love this refreshing option, to richer Thanksgiving sides! Make ahead, but keep the dressing separate. 15-minutes prior to eating, dress the salad and sprinkle with slivered almonds. Use a tart apple of your choice. I use Pink Lady or Fuji apples.

Ingredients
- 2 tbsp Plain Greek Yogurt, reduced fat
- 1 tbsp low-fat mayonnaise
- 2 tsp apple cider vinegar
- 2 tsp water
- ¼ tsp kosher salt
- ¼ tsp black pepper
- 2 cups celery, thinly sliced on the diagonal
- 1 apple, thinly sliced
- ¾ cup chopped fresh flat-leaf parsley
- ½ cup slivered almonds, or walnuts roughly chopped
Instructions
- In a large mixing bowl, combine the yogurt, mayonnaise, vinegar, water, salt and pepper.
- Add in the celery, apple, parsley and almonds. Toss to coat, transfer to a pretty serving dish and serve!
