Refreshing Celery & Apple Salad – Lite!

Crisp, refreshing and light 

Love this refreshing option, to richer Thanksgiving sides!  Make ahead, but keep the dressing separate.  15-minutes prior to eating, dress the salad and sprinkle with slivered almonds.  Use a tart apple of your choice.  I use Pink Lady or Fuji apples.

Ingredients
  

  • 2 tbsp Plain Greek Yogurt, reduced fat
  • 1 tbsp low-fat mayonnaise
  • 2 tsp apple cider vinegar
  • 2 tsp water
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • 2 cups celery, thinly sliced on the diagonal
  • 1 apple, thinly sliced
  • ¾ cup chopped fresh flat-leaf parsley
  • ½ cup slivered almonds, or walnuts roughly chopped

Instructions
 

  • In a large mixing bowl, combine the yogurt, mayonnaise, vinegar, water, salt and pepper.  
  • Add in the celery, apple, parsley and almonds.  Toss to coat, transfer to a pretty serving dish and serve!
