Fresh crisp apples, goat cheese, sliced almonds and baby spinach are tossed in a honey-apple-cider vinaigrette for some serious deliciousness!

Light. healthy and seriously satisfying – this refreshing Spinach-Apple salad makes a great side or a light main for either lunch or dinner. Invite the girls over to enjoy it with a bottle or 2 of Pinot Grigio. My sister says that I have a “Pedestrian” wine palate (WTF is that?) – so, y’know – take my wine advice with that in mind….. just sayin’.

Keepin‘ it Real: If a man is involved – umm, this salad is NOT going to be enough for him. It’s what Oliver calls a “ladies meal” lol.

Spinach Apple Salad with Goat Cheese & Almonds

Ingredients
  

  • 6 cups baby spinach leaves
  • 1 Large Honey-crisp apple, sliced thin (or your favorite apple)
  • ¼ red onion, thinly sliced
  • cup dried cranberries
  • ¼ cup almonds, sliced
  • 2 ounces goat cheese, crumbled

Dressing

  • 3 tbsp extra virgin olive oil
  • ¼ cup apple cider vinegar
  • 1 clove garlic, minced or 1 tsp garlic paste
  • 1 tbsp honey
  • 1 tbsp dijon mustard
  • ½ tsp sea salt

Instructions
 

Dressing

  • In a small bowl, whisk together all of the dressing ingredients until well incorporate.

Salad

  • In a large mixing bowl, toss together all of the salad ingredients except for the walnuts & goat cheese. Pour dressing mixture over salad, tossing to coat.

To serve

  • Divide salad equally between 2 plates. Top each salad equally, with walnuts and goat cheese. Enjoy!
