Summer Grain Salad with Chickpeas + Feta + Fresh Mint

Mains |

Chickpeas with bulgar wheat, cherry tomatoes, cucumber & feta are brightened with a squeeze of fresh lemon + fresh mint & cilantro.

Vegetarian & perfect for lunch or a light dinner! Add grilled shrimp or chicken breast for more protein if you want!

I really love this chickpea & bulgar wheat Summer Grain Salad. Fresh tomatoes, cucumber, mint & cilantro give the whole dish a refreshing balance – but it’s still filling because of the chickpeas & bulgar wheat. Easily add diced chicken breast or grilled shrimp for more protein if you like!

Here’s why you’ll love it:
  • Chickpeas are high plant-based protein, fiber which helps to regulate blood sugar and contain key vitamins and minerals.
  • Bulgar wheat is a fiber-rich whole grain, good for heart health, weight loss, blood sugar control & digestive health.
  • Tomatoes are packed with the antioxidant lycopene, which is believed to reduce the risk of heart disease and cancer.
