Overnight PLANT-BASED Chia-Blueberry Breakfast Pudding

Ingredients
  

  • 3 tbsp chia seeds
  • ¾ cup unsweetened almond (or your favorite nut-milk)
  • 1-2 tsp honey, to taste
  • ¾ tsp vanilla extract
  • cup fresh blueberries
  • 5 chopped almonds

Instructions
 

  • In a cereal bowl add chia seeds, almond milk, honey and vanilla.
  • Mix well to incorporate.
  • Place in the fridge overnight.

To Serve

  • The next morning, stir the mixture, adding more milk if you like.
  • Top with fresh blueberries, chopped almonds and enjoy!
  • Serve in a tall glass with a sprig of fresh mint, if you wanna get fancy with guests 😉
