The combination of protein-rich chia seeds + antioxidant blueberries make this one of my favorite go-to Plant-Based Breakfasts! I add chopped almonds for a little crunch and just enough healthy fat to feel satiated and full!

Make it the night before, then just throw it in the fridge. The next morning add blueberries, almonds and Voila! Healthy, on-the-go and luxuriously delicious!

Ingredients
  

  • 3 tbsp chia seeds
  • ¾ cup unsweetened almond (or your favorite nut-milk)
  • 1-2 tsp honey, to taste
  • ¾ tsp vanilla extract
  • cup fresh blueberries
  • 5 chopped almonds

Instructions
 

  • In a cereal bowl add chia seeds, almond milk, honey and vanilla.
  • Mix well to incorporate.
  • Place in the fridge overnight.

To Serve

  • The next morning, stir the mixture, adding more milk if you like.
  • Top with fresh blueberries, chopped almonds and enjoy!
  • Serve in a tall glass with a sprig of fresh mint, if you wanna get fancy with guests 😉
