By now – you all know that APC has migrated to a Whole-Foods Plant-Based Diet as of January 1st, in our ever evolving quest to incorporate healthy, empowering practices into our lives!

That means, we’re tapping into the Healing Powers of Plant-Based Foods, eschewing meat, dairy and eggs in favor of: Fruits + Veggies + Whole Grains & Legumes!

Since starting this venture, we’ve heard from so many of you who like me – are totally into understanding the healing powers of the foods we eat, and how we can make food work in our favor on the daily.

I’ve also promised to bring you amazing an onslaught of Plant-Based Chefs, Nutritionists & Experts, in an effort to understand HOW we can incorporate Plant-Based Eating, WHY we should consider it & WHAT benefits we can expect to see.

I sat down with Chef Katie (via Zoom, of course!) to get ALL the skinny on Plant-Based Eating! WHAT is it? WHY should we do it? WHAT are the benefits? Oh – and HOW can she help to make it easier!! Here’s what she said……

Q. Ok Chef, give us the 411 on the “Why,” behind your own Plant-Based journey!

I was attracted to WFPB because my mom was struggling with breast cancer. I started reading everything I could about health and realized there is a huge connection between what we put in our body and our health.

It was so empowering because for the first time I realized I could help my mom beat cancer … in the kitchen! I got to work specifically focusing on plant based foods known for fighting inflammation and healing.

I’m so happy to report my mom is cancer free and she attributes a lot of that to changing her diet. Seeing her heal was so powerful and I realized I wanted to show other people that food truly is medicine and that’s how I went WFPB and also started Katie’s Healing Kitchen!

Q.  What are the MAIN benefits people can expect to experience, eating a WFPB diet?  Both on our insides & our outsides…..

Q.   I’m sold! Ok so… for those who are ready to give it a go –  What’s the best way to get started? How can people start integrating Plant-Based eating into their lives, without going cold turkey? (pun clearly intended).

I always recommend tackling dairy first, swapping cows milk for almond or coconut milk is such a no brainer. I also encourage people to rethink breakfast, even just having a simple green smoothie can be such a great way to start the day and will leave you feeling energized and light.

Also, no need to recreate the wheel. If you love tacos swap the ground beef for lentils. Can’t live without BBQ wings? Try replacing the chicken with cauliflower. Small swaps like this will conquer your cravings in a healthy + delicious way without sacrificing your health.

Q. This is great! And finally – what about TIME SAVERS? We want to be healthy, but most of us don’t want to spend a ton of time cooking. Any tips for Easy Meal Prep?
