Hi ladies!!

Okay – is it just me, or do you go through phases where you’re totally into a certain type of food? For me it’s usually seasonal. This summer I was into all things Smoothie, Açaí and Overnight Oats.

Then literally the second it turned into fall – I’ve been all about “breads!” Gluten-Free and No Added-Sugar, of course. I haven’t gone that kray.

A couple weeks ago, it was Banana Bread, last week I made the most deelish Apple Cinnamon Cake with Pecans that was so flippin’ good, Oliver and I polished it off in a day. Ugh. I made one for my parents also, and…..same result. A day later – it was gone girl.

This week, it’s this Lemon-Blueberry Brunch Bread! A Healthier Option when you’re in the mood for Brunch or just want a little sweet treat around the house! Made with freshly grated lemon zest, lemon juice and anti-oxidant rich blueberries – it is addicting!

Of course, any recipe that I bring you will always fall into 1 of 2 categories:

  1. Healthy: Nutritionally beneficial & good for you. These are recipes that are high in vitamins, minerals, fiber, anti-oxidants, good fats – and are very good to add to your daily diet. This usually accounts for 90% of the recipes.
  2. Healthier Option: These are “treats” that would normally have refined sugar, flour, trans or saturated fats (like baked goods). Instead, we’ll take classic favorites and use gluten-free flours, no-sugar substitutes & plant-based oils – resulting in a healthier option for times when ya just want a treat but still want to be kinder to your beautiful body!

Easy & Takes Less than 10-Min to Prep

This falls into the Healthier Option category. Super easy to make, I whipped it up in less than 10-minutes, then threw it in the oven for an hour while I walked the dogs. The entire house smelled warm and lemon-y!

11 simple ingredients that you probably already have in your fridge & pantry. Oh – be sure to spray the pan with cooking spray and dust it with some of the gluten-free flour. Don’t skip the flour-dusting step – you don’t want a hot mess on your hands :-/

Fresh lemon zest, a squeeze of juice and anti-oxidant rich blueberries will make ya swoon. It is SO good!

Lemon-Blueberry Brunch Bread (Gluten-Free, No Added-Sugar)

Ingredients
  

  • cups gluten free flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ¾ cup erythritol (sugar sub)
  • 3 eggs
  • 1 cup plain greek yogurt
  • ½ cup coconut oil, melted
  • tsp lemon zest
  • tsp lemon juice
  • ¾ tsp vanilla extract
  • cup blueberries

Instructions
 

  • Heat oven to 350. Spray & flour a 9x5 baking pan.
  • In a large bowl, combine all dry ingredients.
  • In a small bowl, whisk together all wet ingredients.
  • Add wet ingredients to dry, stirring lightly to combine.
  • Fold in blueberries. Pour batter into baking pan.
  • Bake 60-70 minutes, or until toothpick inserted into center comes out clean.
  • Immediately remove loaf from pan & let cool on a wire rack.
