The Perfect Banana Bread!

Gluten-Free + No-Added Sugar + Cinnamon & Pecans

It’s (almost) Fall Y’all!! Maybe that’s why Banana Bread just sounds….. Sooooo. Freaking. Good! The truth is, I have a recipe for Starbucks’ Banana Bread from like – 10 years ago, that is ridiculously delicious, decadent and addicting….but umm, yeah – it’s full on sugar, canola oil & refined white flour hell. Sigh. Which means it’s gone to the Recipe Graveyard, chez Pelly. Sad face.

There’s more than one way to skin a cat. Translation: We can have our banana bread and eat it too! This way healthier version of Banana Bread is IMO, JUST as delicious without the icky feeling you get after eating refined sugar and white flour laden baked goods. Blah.


Pecans echo the sugar-free Maple Syrup flavor, add nice crunch plus a little healthy fat so we feel satisfied!

When to have it…

You’re the boss of you! Enjoy it whenever you like! This is not an overly-sweet Banana Bread, so it’s super nice to have on a Sunday morning with a cup of coffee OR as an Afternoon treat with a cup of chamomile.


I let it cool for 15-minutes, slice and add a sliver of butter to a warm piece. It just melts in perfectly! 😉

Simple, Basic Ingredients. Nothing fancy….

It’s really easy to make. Just simple, basic ingredients – which is exactly how it should be, right!? Takes under 10-minutes to prepare. Oh – and if you wanna be all-extra about it (I do!)…. sprinkle a lil’ Cinnamon & Sugar-substitute over the top, before sprinkling on the chopped pecans. I did – and it’s awesome!

I made a mixture of 1 tsp Cinnamon + 2 tsp sugar substitute.

Ingredients
  

  • 2 Ripe Bananas, mashed
  • 1 tsp Coconut oil, melted
  • 1 tbsp Maple Syrup, sugar-free
  • 2 Eggs
  • ¼ cup Almond Milk
  • 1 tsp Baking Powder
  • ¼ tsp Salt
  • tsp Cinnamon
  • 1 tsp Vanilla Extract
  • cups Gluten-free Flour
  • cup Pecans, chopped

Instructions
 

  • Pre-heat oven to 350 degree, Spray an 8x5"loaf pan.
  • Mash Bananas in a large mixing bowl.
  • In a small bowl, whisk together oil, maple syrup & eggs. Add to mashed bananas. Mix to incorporate.
  • Mix in flour, salt, baking powder and cinnamon.
  • Pour into the loaf pan.
  • Sprinkle chopped pecans over the top + 1/2 tsp more of cinnamon if you like. I bake it for 40-45 minutes & love it with a cup of Chamomile!
