Happy Holidays ladies!!

Thanksgiving is (almost) here!!!! This has always been my faaaaaavorite Holiday – followed closely by Christmas Eve Day. Not only does Thanksgiving kick-off the best season ever, but it’s a festive yet chill day to hang-out with the fam, cook with my mom and sister, eat good food and get excited about the entire season!


It’s all fun & games until everyone gets a food hangover

Truthfully – being a family of healthy eaters, we all used to get really excited to “totally pig-out” on Thanksgiving. Butter, cream, lots-o carbs, sugar-y desserts – all of it. I guess I’ll take most of the responsibility for that one. I’ve always been someone who does something 150%, or not at all. I don’t half-ass anything ;-/

Since Oliver and I usually host at our home, true-to-form, I’d go overboard on the “pigging out” meal preparation.

The problem, is that while it was really fun to be gluttonous – we’d all end up feeling ill by the end of the day. So – we decided to amend our perspective just a lil!!!


Just throw all ingredients into a food processor & you’re done!! Seriously, you’ll love this just as much as pumpkin pie.

Indulgence without the food hangover

Tweaking traditional recipes

We still indulge – BUT I’ve tweaked traditional recipes like pumpkin pie, to avoid blood-sugar spiking culprits like refined sugar and refined white flour. Instead, I opt for no-sugar swaps like monk-fruit and erythritol, and use coconut and/or almond flour in place of refined white flour.

Doing this, has allowed us to circumvent the crappy sugar-crash, food-hangover we all used to get – while completely enjoying the day and the food!

SO Easy! Less than 5-Minutes, Made in Your Food Processor

SO fast & easy, it’s almost embarrassing. Almost. You literally put all of the ingredients in a food processor – give it a whir and you’re DONE. No baking, heating – nada. EASY – and healthy with Pumpkin Puree, Bananas, Avocado & Almond Butter.


Top with whipped cream & toasted chopped pecans – or keep it vegan with coconut whipped topping instead.

I served in elegant, long-stemmed crystal martini glasses which as we all know, makes everything taste better 😉

VEGAN Pumpkin Pie Pudding (Sugar-Free)

Ingredients
  

  • cups pumpkin puree, canned, unsweetened
  • 1 whole avocado
  • 4 ripe bananas
  • ½ cup almond butter, unsweetened, no additives
  • ½ cup no-sugar maple syrup
  • 2 tsp vanilla extract
  • ½ tsp kosher salt
  • 1 tbsp ground cinnamon
  • 2 tsp ground nutmeg
  • ½ tsp ground cloves

Toppings:

  • Coconut Whipped topping
  • Chopped, toasted pecans

Instructions
 

  • Place all ingredients, except toppings into a food processor – and give it whir. Stop & scrape down the sides a couple times to ensure everything is incorporated.
  • Spoon into pretty serving glasses & place in the fridge until ready to serve.
  • Serve with a dollop of whipped coconut topping & chopped toasted pecans. Enjoy!
