Pancakes with “Maple Syrup” & Chocolate Bark…. SUGAR-FREE!

Truth be told – most of us are super skeptical with marketing claims that seem too good to be true. Especially when it comes to food. I get serious flashbacks of the “non-fat” era where we’d gleefully eat an entire Entenmann’s chocolate cake after Aerobics because it was “fat-free.” That entire era went hand in glove with our nation’s continuing increase in obesity levels, so…..uh, yeah. Eating Fat-Free doesn’t work. It was and is, just a marketing ploy. Sad face.

We now know that fat isn’t necessarily the enemy. Our body needs good fats in moderation to give us energy, support cell growth, help absorb some vitamins and minerals, as well as help us to burn fat! Examples of good fats are things like nuts, nut-butters, avocados and healthy oils.

Until recently, what has been ignored for the most part – is the incredible damage that the proliferation of Sugar in our diets is doing to our entire being. Not just to our waistlines – but to our physical, mental and emotional well-being. Sugar is making us fat, sick, lethargic, depressed addicts.

Let’s recognize the problem and take back control of our health and well-being from the sugar industry and the large food conglomerates responsible for filling our foods with sugary crap that only harms us. The less of it we buy – the stronger the force for change 😉

Pancakes & Chocolate: 2 Sugar-Free Treats You’ll Love!

I mean, who doesn’t love little goodies and decadent treats every once in a while, right? The problem-o, is that some of the things that taste good – make us feel like crap. Like pancakes & syrup….. enticing and yummy Fo’ Sho’, but eating a huge carb-y, sugary stack zaps the crap out of your body. As in – time for a serious nap, followed by a splitting headache. Same with chocolate, right? Imagining myself gorging on a full box of Sees….. ugh.

Sugar-Free Banana-Walnut Pancake & Maple Syrup

I used Lakanto Pancake Mix & “Maple Syrup” Sweetened w/ Monk-Fruit

Why You’ll Love the Pancakes:

These are a much healthier option than traditional pancakes and sugary-syrup. When you really want pancakes – this is the ticket. They’ll satisfy the craving, plus they just taste good!

Second, they’re super versatile. I made Banana-Walnut, but I’ve also folded big fat blueberries into the mix & topped with fresh sliced strawberries and a drizzle of the Sugar-Free Maple Flavored Syrup. SO good – it’s like a little treat, yet so much healthier.

+ High-Fiber (22g in recipe)

+ Protein (16g in recipe)

+ Light, fluffy & deelish!

+ You’ll feel full & satisfied – not heavy and lethargic


Look what I made!

For the Pancakes:

Makes 4 Pancakes

In a medium mixing bowl:

+ Add 1/2 cup of Lakanto Pancake mix

+ 1 Egg

+ 1/4 cup Water

+ 1 tsp Coconut Oil or Olive Oil

+ 1/2 tsp Vanilla Extract

+ 1/2 tsp of Pumpkin Pie Spice or Cinnamon. Whisk until combined.

Next, fold in 1/2 of a chopped banana to the mix. Make the pancakes as usual. Top pancakes with the other half of the banana, sliced + 5 chopped walnuts.

Drizzle with a couple Tablespoons of Lakanto Maple Flavored Syrup. Enjoy!

Almond & Sea Salt Dark Chocolate Bark, by Choc Zero.

Sweetened with Monk-Fruit, you cannot tell the difference. It’s THAT good.

Seriously – if you love your chocolate but not the Sugar Rush/Crash that goes along with it – you must try! Sweetened with Monk-Fruit, this line of dark chocolates from Choc Zero is to die for. I’ve given it to several friends and they look at me confused – like….”Why is she slipping me chocolate – I thought we were friends?” ;-/

Sugar-Free my friends! I’ve tried (ahem….several times….) the Almond & Sea Salt, as well as the Peanut & Sea Salt. Equally delicious. This is awesome to have on hand when you’re PMS-ing and just want a piece of freaking chocolate!!! “In case of emergency, please break glass.” Or in this case – rip open bag. NOW.

Crack into medium-sized pieces and fill a pretty silver dish for guests. Quite nice with a glass of red wine. Of course it still has calories, duh, – so don’t go crazy thinking that Sugar-Free means “I can eat the whole bag.” (cough….me…..cough)….

Just think of it as a (much) better alternative to those times when you’re totally craving a little something sweet, but want to stay Sugar-Free. Enjoy and let me know what you think!
